His: Macadamia Crusted Cod

As you know, my lovely significant other bakes quite a bit and I cook from time to time and our cabinet space fills up rather quickly. So we like to keep our things separate so that we know where all of our goods are. I was snooping through the drawers in the kitchen and stumbled upon a bag of macadamia nuts that were protruding to my side of the kitchen cabinets and haven’t been touched in some time. So I decided to take matters into my own hands and steel those bits of treasure and this just a little somethin’ that I made. 

Macadamia Crusted Cod with organic yellow potatoes!!! We picked up some organic yellow potatoes at the farmer’s market as well as some other things including basil. I just made something simple and cut the potatoes in half or large quarters, seasoned it with fresh ground pepper and salt, chopped scallions and a lot of garlic, olive oil, wrapped it in foil and then threw in on the grill for about 20 or so minutes. Easy.

This “crust” is pretty easy as well! Took some Melba Toasts and ground it up in the blender. I then proceeded to take a good handful of macadamias and then pulsed it in the blender along with the toast. Pulsing helps keep larger but not too large of chunks of the macadamias. Then you can take this coating and pretty much cover any fish of your choice! Dip the fish in egg, then flour, then egg again, then the macadamia and then fry it in about a half inch of oil for about 3-4 minutes on each side. 

ps. we also got some dill and i just made a quick sauce. about a half cup of plain yogurt with about a quarter cup of sour cream for richness. add dill to desired dill-ness and then a good squeeze of fresh lemon juice. mix it up and dollop!
