Hey everyone! This is just a little somethin’ I made for dinner because the weather was so nice and it seemed like a rad meal to make. It’s pretty simple really. I found some spaghetti rigati, in the pasta section, which I’ve never come across before and it looked pretty cool! I just took a nice and beefy, vine-ripened tomato, put a slice of pepperoni on it and then topped it off with a slice of fresh mozzarella. Put it in the broiler for about 5 minutes…and that’s about it! Boiled the pasta accordingly (we like ours al dente) and tossed with with olive oil, fresh basil, and parmesan cheese and BOOM! Somethin’ easy and a bit cheesy. It was nice and light, not too heavy on the sauce and flavor, and perfect to eat outside in the 80 degree Washington weather.
