Hello everyone! I realize that it’s been a while since I’ve posted…and that’s mybad. Things have been pretty hectic, but hey, such is life. Nothin’ that a delicious home made meal can’t cure! This is just a little somethin’ that my lady suggested I make as we were deciding on what to eat for dinner the other night.
It’s quite delicious really and a bit like brunch! And as usual, it’s pretty simple. I made some home made pasta. Thanks to our friends Heather and Anthony for giving us their pasta roller because it had made that process a thousad times easier. No lie.
From there, it’s a really chill process. Boil the noodles ‘til the desired texture. Take some heavy cream and whisk a couple of egg yolks and parmesan cheese. Toss that mixture onto the freshly cooked and drained pasta. Add in some pre-seasoned (with olive oil, garlic and pepper) grape tomatoes, a handful or so of spinach…and then bacon! Poach an egg and voila!!! Garnish with more parmesan cheese and basil and you’re good!!!

ps. “what do you do with the leftover egg white??!”…relax and take a breather…just fry it up and then save it for the morning time to make a tasty breakfast sangwich…cuz you already have bacon!!
